The enzyme then binds to the milk proteins, allowing the liquid to be slowly drained away. The curdled milk then gets pressed into a block for final production.
    •  Acidification – In this method, a high-pH solution is added to the milk to acidify it. The acidity then causes the milk proteins to curdle, forming a cottage cheese-like curd. This process is often used for cottage cheese made from milk powder because it can be done at a lower temperature than the other methods. 
    • Sprouted wheat – Sprouted wheat can be used to create cottage cheese. In this method, wheat berries are sprouted and then blended into flour that can be added to milk to make the cheese. While this method has never been used on a large commercial scale, it is still technically an option for cottage cheese producers.

    How To Ricotta Cheese Made? 

    1. As it is made from milk, ricotta cheese is similar to cottage cheese in many ways. However, ricotta has a few distinct production methods of its own. The most common methods include – 

    2. Traditional – The traditional method for making ricotta is to heat up the milk until it becomes whey. The whey is then strained through a cheesecloth, pressed, and left to cool into a solid form. 

    3. Heat-treated – This method is also known as the “thermocline process.” In this process, the whey is heated to around 100°F (38°C) and then cooled. While this method produces ricotta that is safe to eat, it tastes noticeably different from the traditional variety. 

    4. Acidification – In this method, lactic acid is added to the milk to acidify it, resulting in a ricotta-like curd. This method is often used for ricotta made from milk powder, as it can be done at a lower temperature than the other methods.
