It turns out there are some different types of acidity present in dark chocolate.

    Is Dark Chocolate Acidic?

    It can be, but it depends on the type of chocolate. Generally speaking, dark chocolate is more acidic than milk chocolate. This is because dark chocolate is made with a higher percentage of cocoa beans, which have a naturally acidic flavor. Cysteine is also acidic and it can combine with other cysteine molecules to form a molecule called cysteine. Cystine is an amino acid that contains a sulfur atom and this sulfur atom is acidic. Cystine can combine with other cysteine molecules to form the molecule called cystathionine and this cystathionine is acidic. The acidity of all these different acids produced by dark chocolate depends on how much of them are present in the dark chocolate and their concentrations.

    4. Cocoa Butter: Another source of acidity in dark chocolate comes from cocoa butter. Cocoa butter contains acids known as fatty acids, one of which is known as palmitic acid (PA). This acidity is what makes cocoa butter acidic and it is this acidity that gives dark chocolate its bitterness.

Cystine sulfate is present in milk and this acidity combines with the acidic phenols to form the bitter compounds found in dark chocolate.

    What Is The Ph Of Dark Chocolate?

    The pH of dark chocolate is acidic. This means that it has a low pH, which is a measure of the acidity of something. The lower the pH number, the more acidic something is.
